The head chef trained in the kitchen of "Yakiniku Shimizu", one of the most famous Yakiniku restaurants in Japan, and continued to pursue what is the deliciousness of Yakiniku, and found the answer in Ushimatsu.

We have visited Japanese Black Wagyu farms all over the country and have seen with our own eyes where, who, and how they are raised.
And we have met the great Wagyu farmers such as Mr. Sasaki from Iwate Prefecture, who is thoroughly particular about Mizusawa beef, his own feed, and the shipping age, Mr. Tamura, who raises Kobe beef and Tamura beef in Hyogo prefecture, and Mr. Iimura from Ibaraki prefecture, who produces the rare Iimura beef, and Mr. Hata, who raises Matsusaka beef in Mie Prefecture.
